After the super simple icecream, here’s a really healthy (but stlll yummy) snack that your kids will enjoy making and eating!

Its full of lots of vital minerals like iron, calcium, phosphorus, zinc, selenium, magnesium, manganese and vitamins like vitamin A, B, C, D, E and even K – minerals and vitamins we may not normally get in the regular food we eat. So this is definitely a great supplement in your child’s diet.

The great thing about this recipe is that it is very flexible and you can secretly add in a lot of nuts and seeds that your children may not eat by itself. You can also make it as expensive or cheap as you want depending on your budget.

Ingredients:

  • Oats (2 cups)
  • Any seeds (1/2 cup) (I used watermelon, flax and sunflower)
  • Raisins (1/2 cup)
  • Chocolate chips (1/4 cup)
  • Cinnamon Powder (1 tsp)
  • Salt (1/2 tsp)
  • Dates 200g
  • Peanut Butter (2tbsp)
  • Virgin Coconut Oil (1 tbsp) (optional)

Method:

 

1. Mix the dry ingredients

Mix the oats, seeds, nuts and raisins. Besides these, you can add whatever you like – almonds, cashew nuts, walnuts, peanuts, etc. You don’t need to put everything I have put. This is a very flexible recipe so you can use whatever you have in your house.

2. Blend the other ingredients

In a mixer, blend the dates, peanut butter and oil.

3. Mix it all together

Pour the blended mix (dates, peanut butter and oil) into the dry ingredients and mix it together either with a spoon or with your hands.

4. Bake it

Put it into a baking dish and press down. (From this quantity I got 2 trays of granola.) Bake for 15 mins. Take it out, give it a stir and bake again for another 15 mins.

5. Store it

When its cool, take it out of the pan and store it in an airtight container. You can keep it outside for about 2 weeks. If you want to keep it for longer, then you can keep it in the fridge.

Uses

Eat it plain: This is a great healthy snack to have by itself

 Have it for breakfast: Just like cereal, you can mix this with milk or curd and have a yummy, healthy breakfast

Add it to a dessert: Or ofcourse, just eat it with the super simple icecream!
